PROBLEM TO BE SOLVED: To provide a persistent antioxidant for the persistence of the effect and gustatory improvement of polyphenol, and to provide an additive for oral composition having persistent anti-oxidant action.SOLUTION: The invention provides a persistent antioxidant which maintains for a long time polyphenol bioactivity, particularly anti-oxidant action, obtained by forming a complex of polyphenol derived from Black Soybean with divalent iron ion for edible use, and which further hardly shows the strong bitter taste and astringent taste specific to polyphenol; and an additive for oral compositions having persistent anti-oxidant action.SELECTED DRAWING: None |
