Rice cake containing mulberry leaves extracts is provided to soften rice cake by adding Makgeolli(unrefined rice wine) in a dough kneading process and ensure nutrient such as vitamins by using the mulberry leaves. A method for preparing rice cake containing mulberry leaves extracts comprises the following steps of: mixing 70g of rice powder and 10g of mulberry leaves extracts; kneading the mixture with 50°C of water; adding 15g of Makgeolli to the dough; placing the dough in a container to ferment the dough at 25°C for 5 hours; adding 5g of sugar and raw yeast to the fermented dough; placing the dough in a vessel for rice cake; and steaming the dough with 200°C of steam for 30 minutes. |
