The invention relates to a method for fractionating components of a biomass of protein-rich microalgae of the Chlorella genus, characterised in that it comprises the following steps: providing a biomass of microalgae produced by fermentation; optionally, washing the biomass to remove the interstitial soluble compounds; thermally permeabilising the biomass at a temperature of 0ºC to 150°C, preferably 100ºC to 150°C, for a time of several seconds to 5 minutes, preferably for a time of 5 seconds to 1 minute; separating the biomass thus permeabilised from the soluble fraction using a centrifugation technique, specifically multi-stage centrifugation; optionally, recovering and clarifying the soluble fraction thus obtained by microfiltration so as to remove residual insolubles from same; separating the aforementioned soluble fraction by precipitation, in order to obtain a peptidic isolate and a peptidic concentrate. |
