A composition of natural food preservatives is provided, which composition sufficiently preserves food with a very small amount, does not cause loss of distinct taste and flavor of food, and effectively removes bad smell from food. The composition of natural food preservatives comprises fermented pollen as a main component, and one or more selected from grapefruit seed extract, Yucca recurvifolia extract and chitosan, wherein the fermented pollen is prepared by fermenting edible pollen with Lactobacillus rhamno SNTP01(KACC 91057) at 37 deg.C for 120 hours; and the composition comprises 5 to 20 wt.% of grapefruit seed extract, 5 to 10 wt.% of Yucca recurvifolia extract and 5 to 10 wt.% of chitosan.
