<P>PROBLEM TO BE SOLVED: To provide an acidic oil-in-water emulsified food having a stably emulsified condition even after thawed and excellent in freezing resistance. <P>SOLUTION: The acidic oil-in-water emulsified food is obtained by blending dried albumen, chemically-modified starch and/or treated starch composed of moist heat-treated starch, preferably etherified starch, and subjecting the dried albumen to desugaring treatment and heat storage treatment at ≥65°C preferably ≥68°C. The syneresis ratio of heat-coagulated material in dried-albumen aqueous solution (7 pts.mass of pure water based on 1 pt.mass of the dried albumen) is ≤4 wt.%, preferably ≤3.3 wt.%. <P>COPYRIGHT: (C)2009,JPO&INPIT |
