<P>PROBLEM TO BE SOLVED: To provide boiled noodles resisting to elongation and texture softening and a method for producing the same. <P>SOLUTION: The method for producing boiled noodles according to this invention provides the step where the moisture remaining on the outer peripheral parts of noodles is removed. For example, the wet noodles are covered with a powder that has moisture absorption properties, additionally water retention properties and dispersibility so that the powder are allowed to stick to the outer peripheral part of the noodles or the boiled noodles are blown with air whereby the moisture on the boiled noodles is removed. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
