A dispenser to dispense a set volume of liquid (wine) out of an upright bottle includes a lift platform on which the bottom of the bottle is set and which is lifted to force the lip of the opened bottle against the gasket 24 of the dispenser tap which has a conical mouth. When the lip of the bottle is sealed against the gasket inert gas is pumped into the bottle via inlet 16 and consequently the wine is forced from the bottle into the conduits 18, 17. The electrically operated valve 14 is opened for a predetermined time to meter a controlled quantity of wine into the spout 19 for dispensing. Once the valve is closed, a small charge of inert gas is blown into the top of the spout from inlet 21 to empty and clean the spout.
