<P>PROBLEM TO BE SOLVED: To provide a method for producing frozen oysters with shells which do not produce snap and crack sound and is not cracked open into small chips when roasting the oysters with shells on a kitchen range. <P>SOLUTION: The method for producing frozen oysters with shells comprises the following process: washing oysters clean using sterilized seawater, making the washed oysters temporarily reserved in a cold reserving tank at about ≤10°C pass in a tunnel freezer where the temperature is regulated to around ≤-30°C via a turning conveying belt for about 20-40 min or so, freezing the oysters with shells put out from the tunnel freezer so as to be at about ≤-15°C, preferably ≤-18°C, steaming the frozen oysters for a predetermined time with a steamer, and thereafter, passing again the shelled oysters as they are or those put cream or cheese thereon through the tunnel freezer for about 20-40 min or so. The oysters produced by such a method can be enjoyed in a safe and calm atmosphere indoors as well as outdoors. <P>COPYRIGHT: (C)2004,JPO |
