摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing fried been curd which has smooth texture, comprising producing bean curd dough which equally contains dissolved air through the use of cavitation by supersonic treatment, and deep-frying the bean curd dough in oil. <P>SOLUTION: This method for producing the fried been curd comprises generating recesses, by subjecting soymilk to supersonic treatment, including fine air bubbles in soymilk by the cavitation, adding a coagulating agent to the soymilk which contains fine air bubbles to produce bean curd dough, and deep-frying the bean curd dough in oil.
