<P>PROBLEM TO BE SOLVED: To provide a method for producing fried been curd which has smooth texture, comprising producing bean curd dough which equally contains dissolved air through the use of cavitation by supersonic treatment, and deep-frying the bean curd dough in oil. <P>SOLUTION: This method for producing the fried been curd comprises generating recesses, by subjecting soymilk to supersonic treatment, including fine air bubbles in soymilk by the cavitation, adding a coagulating agent to the soymilk which contains fine air bubbles to produce bean curd dough, and deep-frying the bean curd dough in oil. Alternatively, the method comprises generating recesses, by subjecting the bottom of soymilk to supersonic treatment and generating aeration by fine air bubble from the bottom of soymilk. <P>COPYRIGHT: (C)2009,JPO&INPIT |
