Preparation of concentrated liquid of adapted and viable bacteria (I), useful for food, comprises propagating bacteria (A) in a culture medium (B) in a fermentor, adapting (A), washing (B) (containing (A) adapted by tangential microfiltration) with washing solution, concentrating the washed bacteria to a higher bacterial concentration (5.10 10>, preferably 1.10 11> ufc/ml) and recovering. Independent claims are also included for: (1) the preparation of a food additive comprising addition of (I) to the food product at the end of the production, preferably before packaging the food product; and (2) a device for the production of (I) comprising a tank (1) containing a washing solution, an arrival conduit (2) of the washing solution in a fermentor (3) (where the fermentor (3) is used for the propagation of (A) in (B)), an exit conduit (4), to convey (B) containing (A) towards one or more modules (5) of tangential microfiltration, where the modules allows the separation of (B) in a permeat (6) not containing any bacteria in the concentrate (7) containing the bacteria.
