PROBLEM TO BE SOLVED: To provide a momordicae fruit sweetening component-containing composition and others that contains mogrosides commonly known as a sweetening component of momordicae fruit, exhibits a good sweetness quality, and also has an excellent function such as an antioxidative property.SOLUTION: Provided is a momordicae fruit sweetening component-containing composition: containing mogrosides and a protein prepared by a process in which an extract liquid of momordicae fruit is fed to an immobilized enzyme membrane having a proteinase immobilized therein, and while decomposing the protein of the extract liquid, permeating the liquid through the immobilized enzyme membrane, and by adding, to the immobilized enzyme membrane permeated liquid, an additive component such as sweetener and others; and further containing a sweetener, and in which the content of mogrosides is 0.5 mass% or more and less than 70 mass%, and the content of the protein is 15 pts.wt. or less per 150 pts.wt. of mogrosides.SELECTED DRAWING: None |
