摘要 A method of honey type authentication, characterised in that the free surface of a honey sample is excited with light of the wavelengths ranging between 200 and 500 nm, directed on the surface from above, and the intensity of the fluorescent light ranging in wavelength between 250 and 650 nm and emitted in the direction opposite to that of the excitation is recorded. The records are arranged in ordered set and compared against the benchmark set of fluorescent light intensity values for specific honey types. In order to narrow down the spectrum data, records are taken for those intensities of the fluorescent light, for which the difference between the wavelength of the fluorescent light (?F) and the wavelength of the excitation light (?W) is constant and preferably 100 nm. The benchmark set of the fluorescent light intensity values for specific honey types and the set of intensity values identified for the tested sample are preferably presented in the form of vectors in multi- dimensional space, and the tested honey sample is identified as representing a specific type based on the algebraic vector analysis.
