Oil-in-water emulsion containing lysophospholipo-proteins

An oil-in-water type emulsion comprising (1) an emulsifying agent, (2) a lysophospholipoprotein, and (3) a protein other than the lysophospholipoprotein (2), the protein (3) having a larger molecular weight than the protein (2); and a process for producing the same comprising preliminarily emulsifying a composition containing the emulsifying agent (1) and the lysophospholipoprotein (2), homogenizing the emulsion, and then adding the protein (3) to the homogenate, or comprising emulsifying a composition containing the emulsifying agent (1) and the lysophospholipoprotein (2) by means of a membrane emulsifier and then adding the protein (3) thereto.
