PURPOSE: A manufacturing method of powder soybean paste is provided to prevent leakage of moisture in soybean paste to the outside, and to conveniently cook the soybean paste to powder by aging a soybean paste mixture. CONSTITUTION: A manufacturing method of powder soybean paste includes the following: aging fermented soybeans, yellow koji, and refined salt with a soybean paste mixture at a room temperature for 12-18 days; freezing the aged soybean paste mixture at -30 ~ -40°C for 10 ~ 15 hours; and powdering the frozen soybean paste mixture in 30-40°C for 20 ~ 28 hours. The soybean paste mixture comprises fermented soybeans 98.0-99.8 weight%, the yellow koji 0.1-1.0 weight%, and the refined salt 0.1-2.0 weight%. |
