<P>PROBLEM TO BE SOLVED: To provide a plastic low trans-acid vegetable oil and fat composition containing a lot of liquid vegetable oil and fat, substantially containing no trans-acid, having melting in the mouth, hardness, luster-gloss, shape retaining properties, plasticity, and preservation stability each sufficient as margarine and fat spread, and having an excellent filling viscosity even in production. <P>SOLUTION: The low trans-acid vegetable oil and fat composition comprises 60-80 mass% of (A) component, 10-20 mass% of B component, and 10-20 mass% of C component, as follows. The mass ratio of the B component to the C component is 1:0.5-2. (A) component: liquid vegetable oil and fat, B component: vegetable extremely hardened oil and fat having a melting point of 32-40°C, and containing 50 mass% or more of 8-14C saturated fatty acid, and C component: inter-esterified fat derived from vegetable oil and fat, having a melting point of 34-42°C, and containing 30-50 mass% of 8-14C saturated fatty acid, and 3-10 mass% of 20-24C saturated fatty acid. <P>COPYRIGHT: (C)2010,JPO&INPIT |
