摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing Natto by using a strain of Bacillus natto such as the Bacillus natto deficient in a levan-synthetase gene (sacB) and a sucrose intake protein gene (sacP); and to provide a Natto product produced thereby. <P>SOLUTION: The method for producing the Natto having a high content of a soybean oligosaccharide involves producing the Natto by using the strain of the Bacillus natto deficient in the levan-synthetase gene (sacB) and the sucrose intake protein gene (sacP), or the Bacillus natto having at least no or reduced activity for expressing the sacP to reduce the decomposition of a fructosyl group-containing oligosaccharide derived from the raw material soybean or the added oligosaccharide in the fermentation process of the Natto.
