PURPOSE: A method for manufacturing rice noodles is provided to maintain stickiness and to prevent the rice noodles from being broken by mixing steamed rice with gelatinized rice flour and water and forming the rice noodles using an extruder. CONSTITUTION: A method for manufacturing rice noodles comprises the following steps: forming preprocessed rice flour by steaming rice and gelatinizing 20-90J% of starch; obtaining a paste by mixing the preprocessed with water of 80-100°C; forming the rice noodle by extruding the paste; boiling the noodles, blanching the boiled noodles in water of 80-100°C, and drying the rice noodles to have a moisture content of 15 weight% or less.
