摘要 PROBLEM TO BE SOLVED: To provide a frothing O/W-type emulsion having improved heat- resistant shape-retainability and palatability at normal temperature (20-35 deg.C). SOLUTION: The oil and fat for the objective frothing O/W-type emulsion contain >=75 wt.% of lauric oil and fat and/or transesterified oil and fat composed mainly of lauric oil and fat and 2-25 wt.% of an SUS-type triglyceride (S is a 16-22C saturated fatty acid; U is a 16-22C unsaturated fatty acid).
