A fermenting machine for baking is provided to prevent the surface of bread dough from being hardened by keeping a temperature and a humidity for dough contained in a fermenting space uniform by using a plate-shaped heater and a water feeder. A fermenting machine for baking is composed of: a fermenting housing(10) having a fermenting space(11) for containing and fermenting bread dough; an ejection duct(33) extended in a longitudinal direction on the upper part of the fermenting housing, to guide the air circulated and discharged to the fermenting space; a suction duct(31) extended in a longitudinal direction at the lower part of the fermenting housing, to guide the air circulated and sucked from the fermenting space; a communicating unit(27) making the insides of the suction and ejection ducts communicate with each other; a blowing fan(25) blowing the air flowing from the suction duct, to the ejection duct; and a plate-shaped heater(40) installed at the vertical center portion in the ejection duct. |
