<P>PROBLEM TO BE SOLVED: To provide a method for inhibiting the discoloration of a catechin-incorporated fat-and-oil stemming from heating the catechin-incorporated fat-and-oil to high temperatures. <P>SOLUTION: The method for inhibiting the discoloration of a catechin-incorporated fat-and-oil stemming from heating the catechin-incorporated fat-and-oil to high temperatures is provided, involving using a catechin-incorporated oily preparation in which the respective compounding amounts of a catechin compound, an emulsifier and water are under control within a given range. This oily preparation is easy to produce, high in stability of its own, and excellent in solubility and antioxidative property when added to an oily composition. <P>COPYRIGHT: (C)2008,JPO&INPIT |
