PROBLEM TO BE SOLVED: To provide a method and apparatus for producing HMF from glucose and/or a cellulose-containing material such as a fiber product containing cotton using a flow reactor for enabling mass production at a considerably high treatment speed while suppressing the content of produced by-products.SOLUTION: In a method for producing HMF by flow type hot water treatment where HMF is produced from glucose and/or a cellulose-containing material such as a fiber product containing cotton, a treated material containing cellulose is prepared by enzymatically degrading the cellulose-containing material such as a fiber product containing cotton by a cellulolytic enzyme or crushing the cellulose-containing material by a crusher, a mixed liquid obtained by mixing glucose and/or the treated material containing cellulose with a weak acid is made to flow for a set time through a passage heated to 160-235°C to produce HMF, and the direction of the passage is gradually changed like a coil so that solid matter does not adhere to an inner wall of the heated passage.SELECTED DRAWING: Figure 1 |
