PROBLEM TO BE SOLVED: To manufacture dry noodle having inhibited or prevented "crack of noodle line", which is a problem in high temperature hot air dry.SOLUTION: There is disclosed dry noodle containing a main component and at least one crosslinked pregelatinized potato starch selected from a group consisting of etherified crosslinked pregelatinized potato starch and esterified crosslinked pregelatinized potato starch and having viscosity of the crosslinked pregelatinized potato starch of 50 mPa s or less under a measurement condition with slurry temperature of 20°C, slurry temperature of 5 mass% and rotation speed of 60 rpm.SELECTED DRAWING: Figure 5 |
