PURPOSE: A producing method of soft glutinous rice cookies is provided to reduce the thick texture of glutinous rice by mixing wheat starch and sugar with fermented glutinous rice powder. CONSTITUTION: A producing method of soft glutinous rice cookies comprises the following steps: soaking glutinous rice into water, fermenting for 10days at 30deg C, and crushing(S10); sieving the glutinous rice powder, mixing 100parts of glutinous rice powder by weight, 5parts of wheat starch by weight, and 5parts of sugar by weight, and steaming the mixture for 2hours before stirring(S20); drying the stirred dough, molding the dough, and secondly drying(S30); frying the processed dough(S40); and coating the obtained cookies with syrup(S50). |
