The invention relates to oil-free glycerophospholipid formulations containing a homogenous mixture of glycerophospholipid and a water-free liquid polyol compound such as glycerin in a molar ratio of 1:0.1 to 1. Said formulations are produced, for example, by extracting an initial mixture of an oil-containing glycerophospholipid (mixture) and a polyol constituent with a compressed hydrocarbon (mixture) in a separating column.
