PROBLEM TO BE SOLVED: To provide a noodle strip-producing apparatus which can efficiently produce a noodle strip w2 containing gluten in a sufficiently grown state with the compact apparatus. SOLUTION: This noodle strip-producing apparatus for kneading grain flour mixed with kneading water and then rolling the produced noodle dough (w) with rolling rollers to produce the noodle strip is characterized by the following characteristics. The first rolling roller 5 and the second rolling roller 6 have their rotation central shafts 2, 3 and the coaxial cylindrical circumferential surfaces. The third rolling roller 7 for further rolling the intermediate noodle strip w1 rolled with both the rolling rollers 5, 6 is disposed. The third rolling roller 7 has the rotation center shaft 4 and a plurality of freely rotatable planetary rollers 9 which rotate and simultaneously revolve on a coaxial circumferential locus, and the diameter of the coaxial circumferential locus of the third rolling roller 7 is the same or smaller as or than that of the above-mentioned rolling roller 6.
