摘要 <P>PROBLEM TO BE SOLVED: To obtain a thermostable pectin lyase in which a high-molecular weight pectin is more simply and efficiently produced under a relatively high-temperature condition without using a relatively severe reaction condition such as that of a strong acid in producing a pectin in a broad sense from a plant material and to provide a method for producing a pectin using the same. <P>SOLUTION: The pectin lyase has excellent thermostability. The method for producing a pectin comprises using the lyase. The pectin lyase [EC4.2.2.10] is typically derived from Bacillus licheniformis and has &ge;60&deg;C optimal reaction temperature.
