PURPOSE: A non-heat treated austenitic stainless steel blade and a method of manufacturing the same are provided to improve cutting performance and sanitation function. CONSTITUTION: A non-heat treated austenitic stainless steel blade comprises a nitride compound layer(2) which is formed on a part or the whole of a blade(1). A part of the blade or the whole of the blade has surface hardness of HV 1,000. The austenite stainless steel has Type 304SS or the same kind with Type 304SS. A nickel plating film(3) is formed on a part or the whole surface of the blade. |
