<P>PROBLEM TO BE SOLVED: To provide a method for producing fried food such as a pork cutlet, tempura, French fry or Tatsuta-age (a fried food prepared by frying preliminarily seasoned meat or fish in oil), solving such a problem as to have a high calorie content to make the fried food have a low calorie content. <P>SOLUTION: The method for producing fried food comprises coating a raw material to be fried with fry flour, and spraying the flour-coated raw material with superheated steam at 130-350°C for 180-900 sec to directly heat the material. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
