PURPOSE: A salt-tolerant mutant strain of Candida magnolia SR101 (KFCC-11023) is provided to produce erythritol in a high yield. CONSTITUTION: Candida magnolia SR101 is obtained by mutating JH1 of a Candida genus isolated from honeycomb. Erythritol is produced by culturing Candida magnolia SR101 in a medium containing monosaccharide or a disaccharide, preferably glucose wherein: the medium contains 10-50%(W/V) of glucose, 0.2-2.0%(W/V) of yeast extract, 0.1-10%(W/V) of KH2PO4, 0.1-5%(W/V) of (NH4)2SO4, 0.01-1.0%(W/V) of MgSO4.7H2O and optionally 2-10%(W/V) of KCl; pH is 6-8; the amount of air current is 0.75-2.0 vvm; the culture temperature is 26-30°C.
