PROBLEM TO BE SOLVED: To provide a noodle production method capable of producing a noodle comprising a texture having sufficient visco-elasticity, improved flavor, and improved noodle-making property.SOLUTION: The production method of noodle comprises a step for producing a noodle dough by using a part of raw material, in which the dough is obtained by a step for, kneading grain flour for dough of 0.2-18 mass parts to whole grain flour raw material of 100 mass parts, and water of 100-500 mass parts to whole grain flour for dough of 100 mass parts, at 50-98°C.SELECTED DRAWING: None |
