PROBLEM TO BE SOLVED: To provide a fermentation composition comprising only a natural product, spoiling no original taste and flavor, retaining soft and moist texture and touch feeling without giving bitter taste, uncomfortable odor, stickiness in eating, and unnatural viscousness and elasticity, and usable by adding to a wheat flour expanded processed food product, and a production method and usage of the same.SOLUTION: A fermentation composition contains a fermentation product of wheat embryo.
