The present invention relates to a catalytic composition for carrying out the metathesis of unsaturated fats, particularly unsaturated fats containing oleic acid or oleic acid esters. The catalytic composition of the invention contains an isolatable ruthenium catalyst having the Formula (I) below. The invention also relates to the preparation of compositions containing said catalyst and to the unsaturated fat metathesis methods using said catalytic compositions.
