Independent claims are included for (a) a steam generator for a baking oven, comprising a temperature sensor (32) for measuring the temperature in (4) and a temperature regulator (34) coupled to the sensor, for setting the temperature in (4); and (b) a baking oven, especially an electric rack-type oven, with a baking space (4) and a steam generator (20; 42; 56) .
