<P>PROBLEM TO BE SOLVED: To provide a boiled rice modifier processing in a granular form starch as a boiled rice modifying ingredient, when cooking rice, so as to make it disperse uniformly, retain and improve original luster and viscosity which boiled rice has, and have taste, palate sensation and flavor improving effects. <P>SOLUTION: This boiled rice modifier contains 5-100 wt.% of particulates on a sieve of opening 0.5 mm (32 mesh) and has a heat solubility of 20% or higher and starch content of 40 wt.% or higher. <P>COPYRIGHT: (C)2008,JPO&INPIT |
