The present invention relates to a method for preparing a licorice extract, and a composition for preventing or treating oral diseases, the composition comprising an extract obtained therefrom. According to the present invention, glycyrrhizin is easily and simply removed from licorice, and materials effective in oral diseases can be concentrated and extracted. In addition, since the licorice extract obtained using the method does not contain harmful solvents, the extract is safe for the human body, and since the extract has high inhibitory activity against S. mutans bacteria, the extract is effectively applicable in prevention and treatment of oral diseases such as dental caries.
