METHOD FOR PRODUCING CINNAMIC ACID GLYCOSIDE

PROBLEM TO BE SOLVED: To provide a method for synthesizing a cinnamic acid glycoside from cinnamic acid by a simple process.

SOLUTION: The method for synthesizing the cinnamic acid glycoside in a single step comprises the following: Based on the finding that an enzyme that splits soluble starch produced by Bacillus amyloliquefaciens is most optimal for cinnamic acid glycoside synthesis, Bacillus amyloliquefaciens is modified to obtain a variant M42 that is improved in the capacity of producing an enzyme having the ability to split soluble starch. Using the enzyme produced by the variant M42, a monosaccharide and cinnamic acid are subjected to condensation reaction with each other.
