摘要 <p>The invention relates to a process for assessing the quality of vegetable oils. According to the invention, the process comprises complementary UV-Vis and FT-IR spectrometry techniques for determining the quality and authenticity of vegetable oils by pointing out biomarkers, such as phenolic compounds, carotenoid and chlorophylic pigments, catechols and fatty acids, as well as oxidative alteration processes.</p>
