PROBLEM TO BE SOLVED: To provide an evaporation dehydrating apparatus capable of simplifying an outside air entering preventing mechanism, enabling high-efficiency heat exchange, preventing the adhesion of material to be dried, and suppressing an energy consumption amount in operation. SOLUTION: This evaporation dehydrating apparatus includes a drying container 1, a water vapor compressor 2, a water vapor condenser 3 for performing heat exchange with contents of the drying container 1, a water vapor generating means 7, water vapor lines La, 10, 11 making these devices 1, 2, 3, 7 communicate with one another, and a discharge mechanism 40 for discharging the contents of the drying container 1, wherein the discharge mechanism 40 includes a cylinder 41 communicating with the water vapor condenser 3, a piston 42 for pressing the material to be dried moving from the interior of the drying container 1 through an outlet 1o to the interior 41i of the cylinder to the cylinder outlet 41o side, and a check valve 43 provided at the cylinder outlet 41o.
