CONSTITUTION: A method for manufacturing traditional liquor containing Acer tegmentosum Maxim. comprises: a step of mixing and steaming rice and Acer tegmentosum Maxim. to prepare hard-boiled rice(first process); a step of mixing purified water and Acer tegmentosum Maxim. and extracting(second process); a step of mixing Acer tegmentosum Maxim. extract with wheat flour and wheat bran and inoculating Aspergillus into a liquid medium containing the Acer tegmentosum Maxim. extract and fermenting(third process); a step of mixing Acer tegmentosum Maxim. nuruk and purified water and stirring to prepare extract of Acer tegmentosum Maxim.(fourth process); a step of fermenting the extract and hard-boiled rice and fermenting to prepare crude liquor of Acer tegmentosum Maxim.(fifth process); a step of mixing the hard-boiled rice, extract, and crude liquor and fermenting to prepare ferment(sixth process); a step of filtering and distilling the ferment and distilling(seventh process); a step of adding Acer tegmentosum Maxim. with distilled liquor(eighth process); a step of maturing the distilled liquor and filtering(ninth process); and a step of adding salt, sugar, amino acid, citric acid, and stevioside(tenth process).
