PROBLEM TO BE SOLVED: To solve a problem that a fryer cannot respond to overflow of frying oil from an oil tank. SOLUTION: This smokeless fryer is provided with a cooking part 5 disposed inside an external box 4, an upper opening part between the external box 4 and the cooking part 5 is closed to define the space between the external box 4 and the cooking part as a suction space 6, the upper part of the cooking part 5 is formed with suction ports 7, 7a, etc. to the suction space 6, the suction space 6 is partitioned into an upper space area 6a and a lower space area 6b at a position lower than the suction ports 7, 7a, etc., and an air-permeable fat/oil recovery part 8 is disposed at the partition position. Even if the frying oil overflows from the cooking part 5, this constitution can prevent its moving to the part lower than the partition position and allows the fat/oil recovery part 8 to absorb the overflown frying oil. Simultaneously thereto, this constitution passes exhaust gas rising from the oil surface through the fat/oil recovery part 8 to remove mist such as oil particles contained therein and prevent the adhesion of the mist such as the oil particles to an exhaust gas passage in a downstream side of the fat/oil recovery part 8.
