<P>PROBLEM TO BE SOLVED: To provide a simple method for producing mannooligosaccharide-containing product from coffee-extracted grounds of a waste at food production, and capable of reducing the formation of furfurals and formation of waste liquid. <P>SOLUTION: The method for producing the mannooligosaccharide includes a step for preparing a suspension containing 1.0-40.0% (w/w) of the coffee-extracted grounds by suspending the coffee-extracted grounds in a solution containing a volatile acid, a step for heating the prepared suspension at 150-190°C for 2-20 min, and a step for obtaining an aqueous solution by removing the residue from the suspension after the heating. <P>COPYRIGHT: (C)2011,JPO&INPIT |
