摘要 PROBLEM TO BE SOLVED: To bake a sponge cake in a mold without mold release treatment so that the dough may stick to the inside of the mold and prevent the baked sponge cake from shrinking by turning the backed sponge cake placed in the mold upside down, after being baked, on the contrary to the conventional manners that the mold is pretreated by coating its inner faces with butter, spraying the surface with wheat flour, or spraying the surface with a mold- releasing fat or oil, then, the mold is filled with the dough, and bake, and the baked cake shrinks with its self-weight after it is taken out of the mold, and the sponge cake must be baked only in a single formulation. SOLUTION: The baking mold according to the present invention is constituted with the outer frame 1 and the flat face plate 2. After the finish of baking, the cake is turned upside down together with the mold and cooled down, as it is left. After cooling, a cake knife is placed in between the flat face plate 2 and the outer frame 1 to detach the flat face plate 2, then the knife is placed inside the outer frame 1 to detach the outer frame 1.
