The invention relates to a process which comprises a dough homogenizing phase by compressing the dough in a cavity up to a predetermined value with means for purging the air bubbles out by expulsing them together with a small dough portion during compaction of the dough; the process also comprises a return phase to return to the hopper the dough excess from an initial load phase, the return including a step of transverse cutting and separation of the dough between the inlet of the cavity and the hopper. The machine is comprised of a blade (8) which is transversely displaceable with respect to the opening (5a) of a hopper and is flush with respect to said opening, and has a cutting edge (8b); means are provided to set in motion said blade (8) and means are provided to detect the position of the blade in order to control the displacement means in synchronism with the movements of other mobile parts of the machine.
