PURPOSE: A producing method of Korean traditional cookies using yacon is provided to offer active ingredients contained in the yacon useful to the human body to eaters. CONSTITUTION: A producing method of Korean traditional cookies using yacon comprises the following steps: crushing and compressing fresh yacon to obtain yacon juice(110); firstly heating the yacon juice at 80-90 deg C for 4-8 hours, and cooling the yacon juice before secondly heating at 80-90 deg C for 4-8 hours to obtain a yacon concentrate(120); mixing 100 parts of yacon concentrate by weight with 90-110 parts of malt saccharification liquid by weight, and heating the mixture to obtain a yacon mixed concentrate(130,140); and coating a mother material for the Korean traditional cookies with the obtained yacon mixed concentrate(150).
