A method for obtaining a biomodified food product of chickpea includes comminuting chickpea seed, extracting at pH 3.2 and adding a multienzyme complex. The multienzyme complex comprises endo- and exo-&bgr;-gluconase, xylonase, cellulase, hemicellulase, proteinase, cellobiase in a ratio of enzyme : substrate as 1 : 100. Fermenting is carried out for 3 hours at a temperature of 40 °С. |
