PURPOSE: Kimchi with low calorie, and a producing method thereof are provided to secure the red or pink color of the kimchi without using red pepper powder. CONSTITUTION: A producing method of kimchi with low calorie comprises the following steps: mixing 5.5kg of Chinese cabbage, 34ml of water, and 2.5ml of salt; cutting the Chinese cabbage into half before salting; dehydrating the salted Chinese cabbage after washing; preparing vegetables and seasonings, and mixing the vegetables and seasonings to obtain stuffing; inserting the stuffing among layers of the Chinese cabbage; pouring dried pollack and sea tangle stock to the Chinese cabbage mixture; and fermenting the Chinese cabbage mixture. The vegetables include beet, red koji, yam powder, radish, the Chinese cabbage, and other ingredients. |
