FIELD: food industry. ^ SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages preparation of recipe components, cutting, frying in vegetable oil and milling aubergines and scallops, sunflower flour pouring with drinking water and maintenance for swelling, mixing the listed components with tomato paste, acetic acid, salt, hot black pepper, packing, sealing and sterilisation. ^ EFFECT: invention allows to produce preserves with low adhesion to container walls. |
