The present invention relates to a method for making fermented rice cake dough using a recipe for a steamed fermented rice cake and, more specifically, to a method for making fermented rice cake dough using a recipe for a steamed fermented rice cake which comprises the following processes: soaking rice, a base ingredient of the rice cake dough, in water; pulverizing the soaked rice; mixing the pulverized rice with a fermenting agent such as yeast, makgeolli, etc., sugar, salt, and purified water and then fermenting the same; steaming and kneading the fermented mixture to make a shape, and provides the fermented rice cake having richer flavor and scent than common rice cakes, having a silky texture, and digests well, thereby being suitable for the elderly and the infirm, patients, and children having a poor digestion, and increases the safety of the rice cake by having longer shelf life due to organic acids in the rice cake generated by fermentation. |
