PROBLEM TO BE SOLVED: To provide instant hot-air-dried noodles that have, while having a raw noodle like eat-texture, a natural appearance more like raw noodles than the conventional method, and to provide a method for producing the same.SOLUTION: A method for producing instant hot-air-dried noodles includes: an α-conversion step in which a raw noodle string is subjected to α-conversion using a super heated steam so that the α-conversion degree is 40 to 60%; a hot-air drying step in which the noodle string α-converted by the α-conversion step, is dried with hot air to a water content of 5 to 17 wt.%; following the hot-air drying step, a bulking treatment step in which the dried noodle string is subjected to bulking of the noodle string; and furthermore, after the bulking treatment step, a super heated steam treatment step in which the dried noodle string is subjected to a super heated steam treatment.SELECTED DRAWING: None |
