CONSTITUTION: A method for making Makkoli containing Monascus comprises: a step of steaming rice to prepare hard-boiled rice and adding seed malt; a step of maintaining the mixture at certain temperature to prepare ipguk(Japanese koji); a step of mixing yeast and brewing water to the ipguk and maintaining the mixture at predetermined temperature to prepare a primary fermentation; a step of mixing hard-boiled rice, nuruk, and brewing water to the primary fermentation and maintaining the mixture at predetermined temperature to prepare a secondary fermentation; a step of mixing dissolved starch, powdery Monascus, and brewing water to the secondary fermentation and maintaining the mixture at predetermined temperature to prepare suldeot(rice-wine mash); and a step of diluting the suldeot. |
